Red Velvet and Coffee Cupcakes for a Bridal Shower

I've been a busy bee lately and was excited for a Bridal Shower project that consisted of: 

Red Velvet Mini Cupcakes
Chocolate Mini Cupcakes with Coffee Frosting
Vanilla Mini Cupcakes with Coffee Frosting

In addition to making the mini versions of these delicious cupcakes, I also topped each cupcake with hand-piped royal icing flowers. This added a delicate and very pretty touch to each cupcake. 

The coffee flavor in the frosting was not overpowering and was delicate enough that it made you want more. 

I adjusted the amount of espresso powder (Folders instant coffee granules) and used my daughter and husband as the taste testers (aka Guinea Pigs). We preferred a stronger coffee taste, as they are avid coffee drinkers. 

My daughter loved the frosting so much that she wanted to take a tupperware container full of frosting back to school with her. I may need to send a batch with her next care package and she can make cupcakes with her friends and have this great homemade frosting.

Summer Get Together Dessert Table

I have to admit that as soon as I hear the words "Summer Get Together", a ton of recipes start immediately running through my head. I love that summer desserts incorporate so much fruit and are usually light and Oh... So.... Tasty.... 


For this Summer Get Together, I made a desserts for the 25-30 guests attending, that would offer a little something for everyone. From cupcakes to cookies and Berry Shortcake and Snack Cake, I think it came out great.  


***My daughter actually set the table up for me. I think she has a great future in table design. Don't you agree? She did a great job!!!!!

Baby Shower Desserts and Table

My sister and brother in law are having a second baby and I was so thrilled when my sister asked if I would make some special desserts for her upcoming 'Baby Sprinkle'. 

Planning started and with the wonders of modern technology, I was able to make my first attempt at a Dessert Table confidently. I was secretly up some nights worried about cupcakes and cake plates, but, shhhh, that'll be our little secret.

Cookies and Cream Cupcakes

When my 9 yr old daughter informed me that her class was doing a cupcake sale to raise money to benefit Endangered Species, I got REALLY excited. I started my search for the perfect cupcake by visiting the blogs/sites of some of my favorite bakers. 
I didn't need to go far.... As soon as I opened the cupcake section of 
I knew what I wanted to make and what these children would want to eat. 


When approaching a bake sale, I try to put myself in the shoes of those children and ask myself, "What would I love to eat?" 
Usually I say brownies, chewy cookies or chocolate cupcakes.

I made Cookies and Cream or Oreo cupcakes!!!!
They were a HIT!!!!

Holiday Treats Latin Style

I had the honor and extreme pleasure to make desserts for a Holiday Party hosted last night. 
The Hostess desired having a variety of classic recipes sure to please her guests. 

I planned a dessert menu of small, classic treats.

Here is what I made: 
Vanilla Flan
Bread Pudding (Budin)
Rum Balls
Coconut Kisses (Besitos de Coco)
Mini Pina Colada Cupcakes

Everything was either cut or made into bite-sized portions so that everyone could have a taste of everything without feeling guilty. 

A Blend of Vanilla Wafers, Cocoa Powder, Walnuts, Rum, Light Corn Syrup and Confectioner's Sugar 

A mixture of Coconut flakes, Condensed Milk, Vanilla, and Flour

 A vanilla cupcake with coconut cream and crushed pineapple topped with a
Vanilla Rum Buttercream





The guests and hosts seemed very happy. 
Thank You to the Hostess, N, for allowing me to create wonderful sweets for their special evening. 
I look forward to trying out more new and exciting recipes for a variety of different occasions. 

It was truly a Holiday Feast to celebrate the meaning of the Season!

Wedding Cake and Cupcakes

A Wedding is one of the most wonderful and memorable moments in a couple's life. 
I was recently asked if I would make a small wedding cake with cupcakes for a friend's brother's wedding. 

I was initially nervous, as I felt privileged that I was asked and trusted with such a special project.  I then became excited at the thought of creating something so special for the couple.
We decided on:
Yellow butter and Chocolate cupcakes with white vanilla buttercream frosting detailed with a white royal icing flower 
and
A 6-inch, three layer, yellow butter cake with homemade pineapple filling in fondant with gumpaste flowers and satin ribbon detail.

My friend called me a few days later and said that it all was PERFECT! 
I'm so happy I was able to be part of their special day. 
Congrats to the new Mr. & Mrs.

Chocolate and Peanut Butter Cupcakes

What do you buy to celebrate the birthday of someone who doesn't really like cake? 
A cupcake in his favorite flavors! 
To appease his wife, he agreed to have cupcakes. Hey, at least you can put a candle on top and lick the icing only, if you don't particularly want to eat the cake... YUM! 

I made chocolate cupcakes with Peanut Butter Buttercream Frosting and crumbled frozen peanut butter cups on top of the icing.

I found a great Peanut Butter Frosting Recipe on www.evilshenanigans.com


I used: 


8 tablespoons (1 stick) butter, softened
1/2 cup creamy peanut butter
1 teaspoon vanilla
3 cups powdered/confectioner's sugar
1/4 cup milk (at least), depending how creamy you want it

Hot Pink & Green Cake

This was another addition for the Summertime Party.
A Bright and Modern cake to serve the guests.


Vanilla cake with Strawberry Filling.
Green icing and pink detail in Buttercream.
Hot Pink flowers in Royal Icing.


This cake was placed on top of a small cake plate towered above our very own delicious chocolate chip cookies.

Coordinating cupcakes also adorned several plates nearby.
