Brown Butter M&M Cookies





M&M and Chocolate Chip cookies are my ultimate weakness. 


Sometimes I find that a Chocolate-with-Chocolate Cookie is a bit too much, so I prefer the complex flavors that go into a vanilla based cookie with some Chocolate in it...

Don't get me wrong, there is Definitely a time and place for an ALL Chocolate cookie, but I like the sweetness with the slight salty that comes from a Vanilla based cookie with chips or M&M's. 

Which reminds me... I should also try this recipe with other varieties of M&M's: 
Pretzel M&M's
Mint M&M's
Peanut M&M's may be a little too much for a cookie unless you chop them up into pieces first. 

Anyhoo....    

Saw this beautiful cookie being on Facebook and knew that I needed to try it out. 

Ashley from 'Baker By Nature" http://bakerbynature.com/ did a terrific post back in December about these cookies. She made them in traditional M&M colors and also in the Red and Green Xmas M&M's. The pictures on her site made my mouth water, so I decided to give them a try. Stop by and see her pictures for these cookies. Absolutely Gorgeous!  

This was the first time I Browned Butter for any recipe and was a bit intimidated and a bit nervous. I love the way it gave the cookie a little something extra and have since Browned Butter for another recipe... Thx Ashley!!! 

I made my cookies with the Spring-colored M&M's and I think they turned out great!

Brown Butter M&M Cookies
Ingredients
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon flaky sea salt
  • 16 tablespoons (2 sticks; 8 ounces) salted butter, one stick melted until browned
  • 1 cup + 2 tablespoons dark brown sugar
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla
  • 2 large eggs, at room temperature
  • 2 1/2 cups m&m's
Instructions
  1. Preheat oven to 375 degrees (F).
  2. Line 2 large baking sheets with parchment paper and set aside. In a medium sized bowl whisk together the flour, baking soda, and sea salt; set aside.
  3. Place 8 tablespoons of butter in a small sauce pan over medium-high heat and cook for about 2 minutes – stirring almost constantly – until the butter has browned. Remove from heat and stir in remaining butter; whisk until completely smooth. Place the bowl in the refrigerator or freezer and bring the butter back to room temperature. *You’ll know the butter is at room temperature when you press a finger into the top and it makes a slight indentation.
  4. Once the butter is at room temperature…
  5. Add the sugars and the vanilla to the browned butter and whisk until light and fluffy; about 2 minutes (you may use a standmixer/ handheld mixer to help if you have one). Add the eggs and beat quickly – for only about 30 seconds – until they’re just combined. Let the mixture rest for 5 minutes, then beat the eggs for another 30 seconds. Gently fold in the flour mixture with a wooden spoon, stirring only until the flour begins to disappear. Fold in m&m's.
  6. Roll 3 tablespoon sized balls of dough between your palms to form a ball (they should be big; almost a 1/4 cup), then place on prepared sheet (make sure to leave enough room in between each cookie for inevitable spreading). Continue this process until all the dough has been rolled. Place baking sheets in preheated oven and bake for 11-13 minutes, or until golden at the edges but still soft in the middle. Press additional m&m's on top of the cookies right after removing the pan from the oven, if desired.
  7. Let cookies cool for 5 minutes on the sheet before transferring to a wire wrack to cool completely.

Red Velvet Box Cake Cookies

I bet you didn't know that you could make delicious, quick and easy cookies from a Box Cake Mix!!! 

I hadn't either... Until, I stumbled across a wonderful post and recipe by one of my favorite Bloggers: 
I am Baker.

You too can follow her blog and look at all her wonderful recipes on: Iambaker.net

My daughter is a HUGE Red Velvet cake person. I mean HUGE, so I decided to make the recipe featured on 'I am Baker's' Blog for Devil Food Cake Cookies into Red Velvet Cake Cookies!!! 

I wasn't sure if the recipe would translate the same, but I was pretty confident it would turn out okay. 

Here they are prepared and being packaged up individually for a school event....



They are moist and somewhat chewy and the extra sprinkle of powdered sugar made all the difference. 


Just the right amount of sweetness...

I am baker uses Devil's Food Cake Mix in the Original Recipe, but trust me, you can use any Cake Mix you have on hand. The possibilities are endless....

I omitted the Chocolate Chips in the Red Velvet Version....

Triple Chocolate Devils Food Cookies
Ingredients
  • 1 box Devils Food Cake Mix
  • 1/2 cup oil
  • 2 eggs
  • 3/4 cup White Chocolate Chips
  • 1/4 cup Milk Chocolate Chips
Instructions
  1. Pour dry ingredients into medium bowl.
  2. Add oil and eggs and mix until well combined.
  3. Stir in all chips.
  4. Using a small ice cream scoop or tablespoon, scoop out small balls of dough. This recipe makes 18-24 cookies, so I had three cookies sheets prepared.
  5. Place eight dough balls on each cookie sheet. (If you would prefer a smoother appearance for your cookie, go back and roll each cookie between your hands.)
  6. Bake at 350 for 8-10 minutes

A Very Bubble Guppies Birthday

If you all follow this blog, you know that when my children (including my niece and nephew) make a special request for their birthday, I always try my best to get the job done. 

For my Nephew's 2nd Birthday, My sister told me that it would be a 

"Bubble Guppies Birthday Party" 

Complete with a "Bubble Guy" entertainer. 

So I went right to work looking up ideas to create a dessert table fit for a Prince, I mean 'Merboy'. And I found a million Ideas on Pinterest....


For the cake, I made a Chocolate Snickerdoodle Cake as the bottom layer and a Cinnamon Streusel top layer. 
Decorated the whole cake with blue Vanilla Buttercream and Blue Fondant 'Wave' decor.

For the decor, I attached Bubble Guppies characters made out of Wafer paper and made with edible ink. 
I also added Brown Sugar 'Sand' and Fondant seashells, starfish and sand dollars with some green royal icing seaweed. 



Clamshell Snickerdoodle cookies also adorned the table with Royal Icing holding the Bubblegum 'Pearl. 



Excuse the fuzzy picture. I also made Banana Upside-down Muffin Sand Castles with little paper flags. Laying in the Brown Sugar 'Sand' were Vanilla Sugar cookie and Royal Icing Sand Dollars. 



The Bubble Guppies also made an appearance on the Sugar Cookies decorated with Wafer Paper and Royal Icing Border. 


The 'Bubble Guppies' Dessert Table was a Success. I think everyone enjoyed the tasty creations made for his birthday. 

Also included on the table were: 
Cake Pops
#2 and letter 'A' sugar cookies
And the SMASH cake for the birthday boy.

Double Chocolate Chunk Cookies

I have vowed to make a new cookie every other weekend or so and to try something I haven't done before. 

So, for Mother's Day, my wonderful husband bought me the Martha Stewart's Cookie Cookbook.  I already have the app for my IPad and I love it, so when I saw that there was a cookbook, I started throwing hints left and right. And he listened and bought it for me. 

I had a craving for a rich decadent Chocolate Cookie today and luckily, I found one in the cookbook, and coincidently the recipe is also on her site. 

The cookie is easy to make and rich with flavor. I had everything on hand and whipped up a batch quickly and they were ...... OOOHHH SSSOOO GGGGOOOODDDD!!!! 

On a side note: What do you guys think of my pic? I'm trying to practice more 'Food Blogger'-type of pics. I am very happy with the way this one came out. Bold and the cookies look delish. 

I'm also in the process of making a three-paneled picture-taking studio thingy to help me take better pics. I bought a post board today and will start experimenting with it. I hope it works.

2013 Year in Review - Cookies

As promised... Here is my 2013 Year in Review - Cookie Edition. 

It was such a busy year that I made just a handful of cookies. 


#1: Autumn Fall Cookies with Raspberry Jelly Centers
      These were our favorites last year. Although time consuming, they are SO delicious. 
      Used my 'go to' Sugar Cookie Recipe, Raspberry Jam, and Powdered Sugar

#2: Chocolate Crinkle Cookies with Powdered Sugar East Design
      Needed something quick and Festive and this did the trick... Love these!!!

#3: Pascal from "Tangled" cookies used as cupcake toppers
      For a dear friend's daughter's birthday. The toppers were a surprise and she LOVED                 them!

#4: Mickey Mouse Oreo Cookies
      These were additions to my nephew's birthday party. Instead of labor-intensive                         decorated cookies in the goodie bags, i offered these to my sister as an alternative. 



#5: Baptism Monogrammed Cookies for a friend's baby
      I love the simple design of the cookies. So classic

#6: Chocolate Mint M&M cookies....
       Wow, that was a mouthful. And, yes, I made these about 3 times more... YUM!

#7: Baby Simba Cave Painting Cookies
      These were for my dear friend's son's birthday. They were hand painted, as my airbrush 
      was clogged and I needed to think quick to make this look like the movie. 

#8: Mickey First Birthday Cookie Platter
      For my nephew's First Birthday Celebration. The variety was nice and the colors so 
      Vibrant!

The Great Food Blogger Cookie Swap

I had the HONOR of being part of 'The Great Food Blogger Cookie Swap 2012'!!!!

I saw this idea on another fellow blogger's site and thought it'd be a great idea to be part of such a wonderful swap and challenge.  We each paid $4 to be apart of this wonderful event and the proceeds would go towards Cookies for Kids' Cancer. OXO was also involved and matched the amount that everyone paid.

I was surprised at how challenging I actually found the swap. Everyone entered had to try out a NEW cookie recipe and make 3 dozen cookies. We were given 3 random recipients and each one of these lovely people would receive 1 dozen of the cookies made. 

My husband, 'AKA Taste Tester', helped me find a cookie recipe that was new and sounded delish. I have to admit that I usually stick with recipes that I know and love and am somewhat fearful of trying something new. Especially when this new cookie recipe will be offered to others. We tried several recipes and tried to pick something that people would enjoy. 

We settled on the "Almost Black They're So Cocoa Cookies" recipe right from the 'Best Bake Sale Cookbook' that also benefits 'Cookies for Kids' Cancer'. 


The cookies turned out great and everyone in my home enjoyed them. 

Recipe:

2 sticks unsalted butter, room temperaure
1 cup granulated sugar
2 large eggs, room temperature
1 tablespoon vanilla extract
2 cups all purpose flour
1 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 kosher salt
1 cup walnuts, pecans or hazelnuts, lightly toasted

- Preheat the oven to 350 degrees. Line a cookie sheet with a Silpat or parchment paper
- Place the butter and sugar in the bowl of a mixer fitted with a paddle and beat until smooth and creamy. Add the eggs and vanilla, one at a time, beating well between additions. Scrape down the sides of the bowl. Place the flour, cocoa powder, baking soda, baking powder and salt in a separate bowl and mix well. Gradually add to the butter mixture and beat until everything is well incorporated. Scrape down the sides of the bowl and beat again. 
- Place heaping teaspoonfuls of dough 2 inches apart on the prepared cookie sheet and transfer to the oven. Bake until the edges begin to firm up, 12 to 14 minutes.

Her cookies were Cranberry Noels dipped in white chocolate. They were amazing. 

The second package from Liz and Janice over at mealmakeovermoms.com/kitchen.
Their cookies were a Monster Cookie with cranberries and chocolate chips and chocolate sunflower seed drops. They were also amazing. 

The third and final package came from Ali at www.cheaterbites.com
Her cookies were Oatmeal Raisin Cookies. They were also a big hit in my house. 

All these ladies made me feel like I stressed over nothing and that the main reason to do this was for the fun. "It doesn't matter if you win or lose, it's how you play the game...." Well, play the game, we did!!! and it was SO much fun. 

Note to self for next year: Have more fun with the Process!!!

Coconut Shortbread Cookies & A Great Cause

Being Puerto Rican means that you have certain foods and flavors that you just LOVE and cannot live without. That flavor for me is Coconut....

I love anything Coconut. I not only bake with it, I also do some cooking with coconut milk. 

I have such fond memories as a child eating store-boght coconut cookies that were shaped like rectangles. I could not get enough of these cookies as a child. As an adult, I have a difficult time finding them where I live, but when I do find a pack, I typically stash them away in a secret locale and savor a few cookies a day until the pack is empty. 



I was shopping in my local Bed Bath and Beyond, when I came across this cookbook called, "Best Bake Sale Cookbook". What caught my attention was that it was from a non-profit agency called Cookies for Kids' Cancer. I immediately grabbed the book because: (A) I can always use another cookbook and (B) the proceeds went to a great cause. 

When I arrived home, I began to thumb through the cookbook and found a recipe for 'Coconut Shortbread Cookies' and became so excited. I quickly rounded up my ingredients and began baking. 

I was so happy to see that the recipe turned out GREAT. They are so delicious with a hint of Coconut; nothing overpowering.... I enjoyed them so very much and am very excited to try other recipes from this great book. 

  

If you get a chance, I would recommend that you pick up a copy of the Cookbook for yourself. I may plan a bake sale for the near future, but you don't have to in order to feel as if you have made a contribution to a cause just by treating yourself to a new cookbook.

Summer Get Together Dessert Table

I have to admit that as soon as I hear the words "Summer Get Together", a ton of recipes start immediately running through my head. I love that summer desserts incorporate so much fruit and are usually light and Oh... So.... Tasty.... 


For this Summer Get Together, I made a desserts for the 25-30 guests attending, that would offer a little something for everyone. From cupcakes to cookies and Berry Shortcake and Snack Cake, I think it came out great.  


***My daughter actually set the table up for me. I think she has a great future in table design. Don't you agree? She did a great job!!!!!

Baby Shower Desserts and Table

My sister and brother in law are having a second baby and I was so thrilled when my sister asked if I would make some special desserts for her upcoming 'Baby Sprinkle'. 

Planning started and with the wonders of modern technology, I was able to make my first attempt at a Dessert Table confidently. I was secretly up some nights worried about cupcakes and cake plates, but, shhhh, that'll be our little secret.

Oatmeal Cookies

There are just a few things I love more than any other thing...

And one of those things are old-fashioned, no frill cookies. 
This is a batch of Oatmeal cookies I made for the kiddies and, of course, myself. 

They came out delicious!!!!

This recipe was tweaked from a recipe taken from 'All recipes.com'

1/2 cup butter ( 1 stick)
1/4 cup granulated white sugar
1/4 cup packed brown sugar
1 egg
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon of ground cinnamon (my daughter's favorite)
1/2 cup quick cooking oats
Raisins or chocolate chips to taste (optional)

***This recipe is half of a regular full batch. For a full batch, double the recipe
